I thought about doing a video tut on how to create a fully functional e-commerce website using Opencart. The video would start with downloading and installing, show you how to create your own theme, and finish with tying a payment system like paypal to it. Do you think people would be interested in this?

Yes Sure. Presently am working on an opencart project and its quite interesting, the only challenge I have is trying to build a custom payment module locally. So I will appreciate It thanks.
